Sencha 'Spring Sun' 日光 is a Yabukita varietal ('uncovered') raised in the open under a gentle spring sun.
The Yabukita varietal is the highest grade of sencha and is produced through a unique extended steaming process of the youngest tea leaves.
Sencha 'Spring Sun' 日光 steeping yields a rich green brew with lively, lifted 'classic' characteristics. On the palate a rich 'umami' wave coats the palate and lingers long and desirably persistent.
Brewed correctly, a little of this tea goes a long way. I recommend 7-8 grams with up to 200 ml of water tempered to 80C. Steep for 1-1.5 minutes. If you find it too rich adjust according to your preference.
Sencha Spring Sun 日光 is a welcome new addition to the Sōshin Tea 'Master Select' lineup. And is a keeper.
