Well made Phoenix Oolongs are baked with traditional charcoal fire, in this case two times. Yet, the baking character does not come on strong in the taste profile. Unlike heavily baked oolongs the subtle baking employed in fine quality Phoenix Oolongs such as this do not impart any baked flavour.
The tea exhibits rich fruit - vegetal flavours and aroma. It is of a more delicate, subtle quality compared to strong-baked oolong.
The traditional maturation process for Wu Dong oolongs is carried out at lower baking temperatures for extended length of time. This yields the unique fruity taste profile that quality Phoenix Oolongs are known for.
I have been successful in obtaining a limited cache of this Phoenix Oolong from Wu Dong mountain. It is clean so no 'wash' brewing is required.
For brewing, I suggest using a gaiwan as shown in the photos here. Maximum hot water temp for steeping with fairly quick pour offs. I am able to extract 6-7 rounds from a single pack of this tea in a 150 ml vessel. You could also try 6-7 grams in a smaller gaiwan of 100 ml if you are drinking alone or are of modest intake.
A superb tea for the warm holiday season. Do not hesitate. This tea is very limited.
