Grown at an elevation range 700-1,000 meters Dong Ding Oolong tea is traditionally charcoal roasted, which is our preferred style and the tea we present here. There is a growing trend however to process this in a greener presentation.
The classical roasting nuances a richer, nutty, yet subtly sweet flavour so characteristic of Dong Ding. Dong Ding typically has a longer oxidation period than 'green oolongs' and the degree of roasting can vary from very light to a heavy roast.
Sōshin Dong Ding Oolong is elegantly balanced to a 'mid roast' lending a 'moreish' nature to its aroma.
Sōshin select Dung Ding Oolong Tea comes from the Nantou region in the heart of Taiwan. Special withering and firing techniques shape the leaves into small pearl-like spheres with a tender greenish centre and curled dark edges.
After steeping the leaves gradually unfurl, producing a rich, full-bodied, sweet flavour. The straw yellow tea liquor yields biscuity and attractive flowery notes.
Sipping this very attractive infusion you may experience flowery gardenia and velvety soft vanilla balanced wonderfully with just the right degree of astringency. You most likely will conclude: 'Give me more. Please.'
